The ”cerdo ibérico“

 

 

The ”cerdo ibérico“, the Iberian pig, is a half wide breed which adopted perfectly to the climate of southern Spain over thousands of years.


It is undemanding, stolid, calm and neither aridness nor extreme heat or rough winters can throw this animal.


The black pig lives in the ”dehesa“, a sparse forest of evergreen holm and cork oaks, mainly       to be found in Extremadura, parts of West Castilla and in Andalusia.


Its main diet consists of grass, herbs and roots. During the final fattening (montanera) between October and March these pigs eat up to 70% acorns outdoors. Over this period the Iberian  pigs build up a high degree of marbleling in their muscle tissue, a lot of movement has an increasing effect, which, together, create the fantastic and globally unique taste of this meat.


The meat of the Iberian acorn pig is low in cholesterol and stands out
due to its high level of unsaturated fat acids. Its fat, which is usually frowned on makes it special in this case.
